It's not always
easy to find an elegant vegan dish that doesn't take up a lot of time to
prepare. This recipe for lemon ricotta pasta and spinach is the perfect meal to
make when you want something delicious and easy.
Ingredients: -1/2
lb whole wheat penne pasta -1 lemon, zested and juiced -salted water or
vegetable broth for cooking-2 tablespoons extra-virgin olive oil -4 cloves
garlic, minced (about 2 tablespoons) -pinch of red pepper flakes (optional)
Prep: 1. Bring a
pot of salted water or vegetable broth to boil over high heat. Place the dry
penne pasta in it and cook until al dente, about 10 minutes. 2. Meanwhile,
combine the olive oil, garlic and red pepper flakes in a large saucepan over
medium heat, stirring occasionally until the garlic is almost browned, about 5
minutes. 3. Remove the cooked pasta from the water and place it in a bowl.

over medium heat in a large skillet until it is almost browned. To do this,
remove two cloves of crushed garlic from the clove (about three teaspoons) and
add them to the skillet with 1/2 teaspoon of red pepper flakes. To get an exact
color around your pasta platter, try using small pieces of green bell pepper
sprinkled in between each shape of noodles. Add your pre-cooked penne noodles
into it first, followed by fresh spinach leaves, which are then sautéed in
other clumps until they have bright green color to them. Continue cooking the
pasta and spinach over medium heat, occasionally stirring until they are nicely
wilted and have a nice color.
